Description
Marinated pork steak with asparagus
Ingredients
- Pork Blood - 31.7 oz
- Soy Sauce - 7 fl oz
- Spicy salami - 5 teaspoons
- Asparagus - 14.1 oz
- Butter - 1 tablespoon
- Olive Oil - 1 tablespoon
- Sugar - 1 teaspoon
Step by Step guide
Step 1
Thaw the meat gradually: at least 24 hours in the refrigerator, and then at room temperature until completely thawed. The ideal thickness for the steak is 3 cm. Marinate the pork in soy sauce (after washing the meat in cold water) with dissolved mustard for 1 to 1.5 hours at room temperature.
Step 2
Meanwhile, prepare the asparagus. In a heated skillet, add 1 tablespoon of butter and then pour in the olive oil. Next, sprinkle with sugar and salt. Place the asparagus in the skillet and sauté for a bit.
Step 3
Pour 100 ml of water into the skillet and cover with a lid for 3 minutes, stir, and cover again for another minute. Open the lid and sauté on high heat until all the liquid evaporates. The asparagus is ready.
Step 4
Remove the steaks from the marinade and lightly pat dry with a paper towel, squeezing out a bit. Sprinkle coarse salt and pepper on both sides of the meat, gently pressing to ensure the salt and pepper penetrate the meat. Before frying, brush the pieces with vegetable oil (do not pour oil into the skillet! The skillet should be cast iron or aluminum with a non-stick coating).
Step 5
Place the steaks in a well-heated skillet and sear for 2 minutes on each side to form a crust that prevents the juices from escaping. After that, cook the steaks on each side for 3 to 6 minutes (4 to 5 minutes is the optimal time, as the steak cooks through while remaining juicy and tender).
