Marinated swordfish steaks with ramen noodles and vegetables
Ingredients
- Salt - 2 teaspoons
- Scorpion fish fillet - 2 pieces
- Ground Black Pepper - a pinch
- Garlic - 2 cloves
- Mild Chili Spice - 1 piece
- Ground coriander - 2 stems
- Lime Juice - 1 tablespoon
- Chicken Broth - 1 qt
- Mini vegetables - 2.6 oz
- Udon Noodles - 10.6 oz
- Scallions - 4 stems
- Vegetable Oil - to taste
Step by Step guide
Step 1
Line a baking sheet with plastic wrap and sprinkle half of the salt on it. Place the fish on top, then sprinkle with the remaining salt, black pepper, minced garlic, chopped chili, and cilantro. Drizzle with lime juice. Cover with plastic wrap and place another baking sheet with a weight on top. Leave to marinate overnight.
Step 2
The next day, heat the broth and cook the vegetables until tender, about 2-3 minutes. In boiling water, cook the noodles until soft, drain, and divide into 2 bowls. Pour the broth with vegetables over the noodles.
Step 3
Brush the fish to remove the salt mixture. Preheat the grill and lightly oil it. Grill the fish for 2-3 minutes on each side until grill marks appear. Cut the steaks into strips and place them on top of the noodles. Sprinkle with chopped green onion.
