Description

Citrus acids easily tenderize the meat fibers, and with the addition of honey, the orange juice sets on the skewers as a caramel glaze. These skewers can be served very simply, alongside steamed or grilled vegetables. They will smell delightful, look beautifully browned, and most importantly, these skewers are extremely difficult to overcook, as the baked honey crust securely locks in the juices of each piece of meat.
Ingredients
- Chicken fillet - 28.2 oz
- Vegetable Oil - 1 fl oz
- Oranges - 1 piece
- Grapefruits - 1 piece
- Mild Chili Spice - 1 piece
- Garlic - 3 cloves
- Coriander essential oil - 1 tablespoon
- Honey - 1 tablespoon
- Olive Oil - 5 teaspoons
- Salt - ½ spoons
- Blanched frozen corn - 1 piece
- Young zucchini - 1 piece
- Sweet Pepper - 1 piece
- Tomatoes - 4 pieces
Step by Step guide
Step 1
Prepare the marinade. Squeeze the juice from the orange and grapefruit into a bowl.
Step 2
Finely chop the chili pepper.
Step 3
Peel the garlic and crush it in a mortar along with the coriander and salt.
Step 4
Stir the garlic mixture and chili into the juice. Add honey and olive oil, then mix well.
Step 5
Cut the turkey into cubes about the size of half a matchbox, place it in the marinade, and let it sit for 1 hour.
Step 6
Remove the turkey from the marinade and thread it onto skewers.
Step 7
Grill on a well-heated, oiled grill or in a skillet until cooked through, about 4 minutes on each side.
Step 8
Cut the corn crosswise into 4 pieces, slice the zucchini into 2 cm thick rounds, and grill all the vegetables on a well-heated, oiled grill or skillet, turning occasionally, for 4–5 minutes. Serve the skewers with grilled vegetables.
