Martini with King Prawns and Scallops
Ingredients
- Marinated cherries - 1.8 oz
- Avocado - 1.8 oz
- King Prawns - 1.1 oz
- Scallops - 1.1 oz
- Grapefruits - 0.7 oz
- Oranges - 0.7 oz
- Lemon - 0.4 oz
- Mixed salad greens - 0.7 oz
- Honey-Mustard Dressing - to taste
Step by Step guide
Step 1
Cut the cherry tomatoes in half. Peel and dice the avocado into 1x1 cm cubes.
Step 2
Peel the grapefruit and orange, and cut the flesh into segments.
Step 3
In a hot skillet, pour olive oil and separately sauté the tiger prawns (for 2 minutes) and the scallops (for 5 minutes). Mix the cooked components together.
Step 4
Place a leaf of salad at the bottom of a martini glass, then add the seafood mixture on top. Add the peeled segments of grapefruit and orange.
Step 5
Dress the salad with Emile Noel dressing made from canola oil, lemon, and Dijon mustard. Garnish the glass with a slice of lemon.
