  • Water - 1 teaspoon

Step 1

Heat the cream to 167°F (until the first bubbles appear).

Step 2

Dissolve the lemon juice in water, pour it into the cream, and cook on the lowest heat for 10 minutes while stirring with a spoon.

Step 3

Place a double layer of cheesecloth in a strainer, pour in the cream, and let the whey drain (1.5–2 hours), stirring occasionally with a spoon.

Step 4

Transfer the mixture to a container and refrigerate until fully thickened.
