- White bread - 5.3 oz
- Paprika - 1 teaspoon
- Bacon - 4.2 oz
- Chorizo - 4.2 oz
- Olive Oil - 6 fl oz
- Bay leaf - 3 pieces
- Garlic - 1 clove
- Salad Potatoes - 3 lbs
Step by Step guide
Step 1
Peel the potatoes, cut them into large pieces, place them in a pot, add cold water, 1 teaspoon of salt, garlic, bay leaves, and 1 tablespoon of olive oil. The water should cover all the potatoes. Bring to a boil, then reduce the heat and cook for 20-30 minutes until the potatoes are soft.
Step 2
Meanwhile, heat 3-4 tablespoons of olive oil in a skillet over medium heat. Fry thin slices of bread for 2 minutes on each side until golden brown. Use a spatula to transfer them to a plate lined with paper towels. Cut them in half to make triangles.
Step 3
Remove the crumbs from the skillet and add the remaining olive oil – fry the diced chorizo and bacon for 5 minutes, stirring gently. Remove them with a slotted spoon and set aside. Take the skillet off the heat and add the paprika, mixing well, then return the meat to the skillet and keep on low heat just to keep the sausages warm.
Step 4
Drain the water from the potatoes, remove the bay leaves and garlic. Mash the potatoes, transfer them to a large warm dish, add the contents of the skillet along with the oil, and mix well. Serve with the fried bread.
