Description
To make the meatballs juicy and tender, you need the freshest ground meat from a premium cut. If you are making the ground meat yourself, we recommend using the chuck (the muscle adjacent to the spine).
Ingredients
- Lean Beef - 26.5 oz
- Onion - 1 head
- Breadcrumbs - 3.5 oz
- Chicken Egg - 1 piece
- Cream 22% - 9 fl oz
- Salt - 2 teaspoons
- Ground Black Pepper - to taste
- Butter - 1.8 oz
- Vegetable Oil - 1 fl oz
- Wheat Flour - 2 tablespoons
- Milk - 7 fl oz
- Soy Sauce - 2 teaspoons
- Mustard Greens - 1 teaspoon
- Salad Potatoes - 4 pieces
Step by Step guide
Step 1
Peel the potatoes, cut them into quarters, place them in a pot, and cover with water so that it completely covers all the pieces. Add salt, bring to a boil, and cook for 20 minutes.
Step 2
Finely chop the onion and place it in a deep bowl. Add the ground beef, breadcrumbs, egg, 75 ml of cream, 1 teaspoon of salt, and pepper.
Step 3
Mix the mixture thoroughly with your hands. Wet your hands with cold water and shape the mixture into meatballs the size of walnuts.
Step 4
Preheat the oven to 320°F. Melt a mixture of vegetable and butter in a skillet and fry the meatballs on all sides.
Step 5
Transfer the meatballs to a baking dish or another skillet and place in the oven for 10 minutes. Meanwhile, prepare the sauce using the meat juices left from the meatballs.
Step 6
Add flour to the skillet where you fried the meatballs. Cook it over medium heat for 1–2 minutes, then pour in the milk and 100 ml of cream, add soy sauce and mustard. Whisk the sauce thoroughly until it thickens.
Step 7
Drain almost all the water from the pot where the potatoes were cooked. Mash them with a potato masher, add 100 ml of cream, and mix thoroughly.
Step 8
Serve the meatballs with the mashed potatoes.
