- Garlic - 1 head
- Olive Oil - 0 fl oz

- Parsley - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
Peel the potatoes and cut them into quarters.

Boil the potatoes until tender.

Slice off the top of the garlic head.

Place the garlic in aluminum foil, drizzle with olive oil, and wrap it up.

Bake in a preheated oven at 392°F for 15 minutes, until it becomes tender and golden.

Mash the potatoes.
Step 8
Mash the potatoes and squeeze in the contents of the garlic cloves, then mix well. Season with salt and pepper to taste.

Drizzle the puree with good quality extra virgin olive oil to complement the sweetness of the garlic with the herbaceous flavor of the olives. Garnish with finely chopped parsley.
