Description
Ready-made mayonnaise with ponzu sauce is perfect for salads and both cold and hot dishes made with fish and seafood. However, it should not be paired with red meat dishes.

- Whole egg - 1 piece
- Dijon Mustard - 0.2 oz
- Meyer Lemon Juice - 0 fl oz
- Vegetable Oil - 1 fl oz
- Olive Oil - 1 fl oz
- Salt - to taste
- Soy Sauce - 3 fl oz
- Orange juice concentrate - 1 fl oz
- Kombu Seaweed - ⅓ pieces
- Ginger - 0.2 oz
- Sugar - 0.4 oz
Step by Step guide
Step 1
First, prepare the ponzu sauce: mix together 10 ml of lemon juice, orange juice, kombu seaweed, grated ginger, and sugar. Let it steep for 12 hours and then strain.
Step 2
In a bowl, combine 5 ml of lemon juice, mustard, and egg yolk, and whisk together. Gradually drizzle in cold vegetable oil, followed by olive oil, mixing thoroughly until a thick consistency is achieved. Add salt to taste. Combine the mayonnaise with 25 ml of ponzu.
