Description

Rice vinegar can be substituted with regular or apple vinegar; in this case, lemon juice is not needed, but you should add 0.5 to 1 teaspoon of sugar. Important! All ingredients must be at room temperature!

  • Quail Egg - 6 pieces
  • Rice Vinegar for Sushi - 1 tablespoon
  • Meyer Lemon Juice - 1 teaspoon
  • Mustard Greens - 0.2 oz
  • Salt - 0.2 oz

Step by Step guide

Step 1

In a half-liter jar or blender cup, place the vinegar, lemon juice, mustard, and salt, and mix everything together.

Step 2

Add the eggs and carefully pour in the oil.

Step 3

Lower the immersion blender to the bottom of the container so that all the yolks are under the blender cup. Whip at maximum speed.
