  • Wheat Flour - 19.4 oz
  • Chicken Egg - 3 pieces
  • Water - 3 fl oz
  • Pork Mince - 8.8 oz
  • Lean Beef - 7.1 oz
  • Onion - 2.5 oz
  • Garlic - 2 cloves
  • Parsley - 0.2 oz
  • Thyme - 0 oz
  • Salt - to taste
  • Ground Black Pepper - to taste
  • Bay leaf - 1 piece
  • Green peppercorns - to taste
  • Sour Cream - to taste
  • Butter - 0.4 oz

Prepare all the ingredients.

Sift the flour into the mixing bowl. Set aside 50 grams for dusting. Add the eggs, salt (6 g), and water.

Kneading the dough will take about 7–10 minutes. The dough should be elastic, pliable, and not sticky to the hands. If the dough turns out to be dry, you can add a little water.

Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Finely chop the onion and parsley.

Combine the ground beef and pork, then add the onion, parsley, thyme leaves, and minced garlic. Season with salt and pepper.

Thoroughly mix and knead the minced meat. If the mixture is too dry, you can add a little water or broth. Let it rest in the refrigerator for 15 minutes.

Divide the dough into four pieces. While working with one piece, cover the remaining pieces with a damp cloth.

Dust the work surface with flour. Roll out the first portion of dough to a thickness of 1 mm or slightly thicker. Cut out circles of dough using a pastry cutter or glass. Place the cut dough circles on a flour-free surface and cover them immediately with a damp cloth. Repeat the same steps with the remaining dough.

Place a teaspoon of filling in the center of each dough circle. Pinch the edges together to form dumplings. If the edges of the dough do not seal well, you can moisten them slightly with water.

Bring water to a boil in a large pot. Add salt, whole peppercorns, and a bay leaf.

Drop the dumplings into boiling water and gently stir. Once the dumplings float to the surface, cook them for an additional minute and remove with a slotted spoon.
