Description
The beauty of this recipe is that it doesn't specify the type of meat for the filling or the kind of cheese. This allows for creativity. For example, you could use pork and feta. Or lamb and sulguni. Or duck and Gruyère. Or even a store-bought 'Homestyle' ground meat and Russian cheese from the same place.
Ingredients
- Veal Mince - 17.6 oz
- Cheese Spread - 3.5 oz
- Onion - 1 head
- Chicken Egg - 1 piece
- Salt - to taste
- Semolina - 2 spoons
- Breadcrumbs - to taste
- Vegetable Oil - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Grate the onion on a coarse grater.
Step 2
Add onion, semolina, egg, salt, and pepper to the minced meat, and mix thoroughly.
Step 3
Cut the cheese into small cubes.
Step 4
Shape the minced meat into flat patties. Place cubes of cheese on top of each patty. Fold them to form a cutlet.

Step 6
Pour vegetable oil into a preheated skillet. Place the patties in the skillet and fry over medium heat for about 5 minutes, or until golden brown.
Step 7
Flip to the other side and fry for another 5 minutes. Then cover with a lid and cook for an additional 7–10 minutes on low heat.
