Description

A roll is a simple way to combine several different ingredients in one dish. It is also a great option for a family dinner or a festive gathering: its elegant appearance and rich flavor of meat and filling elevate it from the category of mundane everyday meals to something special. It's best to use pork cuts (loin works best), but you can also base it on beef tenderloin. The filling is quite versatile as well: instead of mushrooms, you can stuff the roll with prosciutto, sweet peppers, spinach, and cheese, for example.

Ingredients

  • Pork tenderloin - 2 lbs
  • Onion - 1 head
  • Garlic - 2 cloves
  • Champignons - 7.1 oz
  • Parsley - 1.4 oz
  • Mustard Greens - 1 tablespoon
  • Honey - 1 tablespoon
  • Vegetable Oil - 1 fl oz
  • Butter - 0.7 oz
  • Salt - to taste
  • Ground Black Pepper - to taste

Chop the onion and mushrooms into small cubes, and mince the garlic and parsley.

In a skillet, heat vegetable and butter, and sauté the onion until golden brown.

Add the minced garlic and stir for 30 seconds.

Add the chopped mushrooms and sauté, stirring, for another 5–10 minutes, until the water released from the mushrooms has evaporated.

Add parsley, season with salt and pepper to taste, and remove from heat.

Make a cut along the piece of meat deep enough to open it up. The thickness of the resulting piece should be about 2 centimeters.

Cover the meat with plastic wrap and pound it with a meat mallet.

Rub the meat with salt and pepper, then spread the mushroom filling on top and distribute it evenly.

Roll the meat into a tight log and tie it with kitchen twine.

Transfer the roll to a baking sheet, cover it with foil, and place it in an oven preheated to 356°F for one hour.
