Ingredients
- Olive Oil - 2 fl oz
- Yellow Cherry Tomatoes - 14.1 oz
- Blue Cheese - 4.2 oz
- Veal Tenderloin - 17.6 oz
- Arugula - 8.8 oz
- Chives - 3 tablespoons
- Dijon Mustard - 1 tablespoon
- Malt Vinegar - 2 tablespoons
- Worcestershire Sauce - ¼ teaspoon
- Honey - ½ teaspoon
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
In a small bowl, whisk together the mustard, vinegar, Worcestershire sauce, honey, and 75 ml of olive oil. Season with salt and pepper to taste.
Step 2
Pat the meat dry and season both sides with salt and pepper.
Step 3
In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the meat and cook for 5 minutes without moving it. Flip and cook for another 3 minutes for medium doneness.

Alternatively, preheat a grill. Oil the grill grate and cook for 4-6 minutes until medium doneness.
Step 5
Transfer the meat to a cutting board and cover with foil. Let it rest for 5 minutes.
Step 6
Arrange the arugula on a large plate.
Step 7
Slice the meat thinly against the grain and place it on the leaves.
Step 8
Top with halved cherry tomatoes and crumbled blue cheese.
Step 9
Drizzle with the prepared vinaigrette and sprinkle with chopped chives.
