Ingredients
- Pork Blood - 7.1 oz
- Peanut Sprouts - 3.5 oz
- Onion - 1 head
- Garlic - 2 cloves
- Tomatoes - 2 pieces
- Fresh Mushrooms - 6 pieces
- Vegetable Oil - 3 tablespoons
- Wild Garlic Greens - to taste
- Mild Chili Spice - 1 piece
- Parsley - 1 bunch
- Chicken Egg - 1 piece
- Meyer Lemon Juice - 1 tablespoon
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Rinse the meat, cut it into strips against the grain, and fry it in vegetable oil with chopped onion and garlic.
Step 2
Peel the tomatoes, chop them, and add to the meat.
Step 3
Chop the mushrooms, chili peppers, garlic greens, and parsley, and combine with the tomato-meat mixture. Simmer for 30 minutes. Add the peanuts. Season with salt and pepper.
Step 4
Beat the eggs with salt and fry a loose omelet, keeping the surface slightly 'jelly-like'. Cut into portions.
Step 5
Place pieces of omelet on plates, top with the meat mixture. Drizzle with lemon juice and sprinkle with chopped herbs.
