- Onion - 1 head
- Herbs - 1 bunch
- Pork Neck - 3 lbs
- Olive Oil - 1 tablespoon
- Ground clove - to taste
- Salt - to taste
- Mustard Greens - to taste
Step by Step guide
Step 1
For the filling: wash and chop the onion, chop the mushrooms randomly, sauté over medium heat for 5–10 minutes, then add the chopped herbs and mix everything.
Step 2
Wash the pork, pat it dry, and make a longitudinal cut to create a flap. Drizzle the resulting flap of meat with oil, season with salt, pepper, and sprinkle with mustard seeds.
Step 3
Spread the filling over the meat and roll it up like a loaf, securing it with toothpicks and twine.
Step 4
Place the loaf on a baking sheet (previously lined with foil), put it in a preheated oven at 464°F for 25 minutes, then reduce the temperature to 356°F and cook for 1 hour.
