Mediterranean Bean Salad
Ingredients
- Olive Oil - 2½ tablespoons
- Red Wine Vinegar - 2½ tablespoons
- Brown Sugar - 1 teaspoon
- Salt - ¼ teaspoon
- Ground Black Pepper - ¼ teaspoon
- Dried Rosemary - ¼ teaspoon
- Chopped Sage Leaves - 1 tablespoon
- Garlic - ½ clove
- Fava Beans - 2 cups
- White Beans - 7.8 oz
- Chickpea - 1 cup
- Pitted olives - 6 pieces
- Orange Bell Peppers - ½ piece
- Spanish onions - ¼ head
Step by Step guide
Step 1
Boil the fava beans in boiling water for 4 minutes. Drain and rinse under cold water. Remove the tough outer skin and transfer to a bowl (only the bright green inner part should remain).
Step 2
In a jar, combine the olive oil, vinegar, sugar, minced garlic, oregano, parsley, salt, and pepper. Close the lid and shake well.
Step 3
Add the beans, chickpeas, chopped olives, diced pepper, and finely chopped red onion to the fava beans. Drizzle with the dressing and mix well.
