Mediterranean Chicken

Ingredients

  • Poultry - 1 piece
  • Orange Bell Peppers - 3 pieces
  • Parsley - 1 bunch
  • Red Long Chili Peppers - 1 tablespoon
  • Dry White Wine - 7 fl oz
  • Olive Oil - 5 tablespoons
  • Lemon - 2 pieces
  • Ground Black Pepper - to taste
  • Salt - to taste
  • Garlic - 3 cloves

Step by Step guide

Step 1

Wash the bell peppers and roast them in a preheated oven at 428°F. Once the peppers are completely soft, remove them from the oven. Allow the peppers to cool completely, then peel off the skin and clean the insides.

Step 2

Peel and finely chop the garlic. Wash and finely chop the parsley. Wash the chicken, clean it, cut it into serving pieces, and place it in a bowl. Drizzle with lemon juice, add parsley and garlic, ground red and black pepper, and mix well. Leave in a dark place for 2 hours. Then drizzle with oil, season with salt, and mix again. Place the chicken on a baking sheet and bake in a preheated oven at 356°F for 1.5 hours, periodically removing it to baste with wine, stirring occasionally. 15 minutes before it is done, add the bell peppers, drizzle with oil, and return to the oven.
