Mediterranean Chicken Baked with Potatoes
Ingredients
- Lemon - 1 piece
- Chicken Thighs - 4 pieces
- New Potatoes - 2 lbs
- Fresh Rose Hips - 4 sprigs
- Thyme - 1 bunch
- Bay leaf - 2 pieces
- Olives stuffed with lemon - 3.5 oz
- Olive Oil - 2 tablespoons
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Separate the thighs into drumsticks and thighs. I find it very convenient to do this with poultry scissors;
Step 2
Place sliced lemon, chicken, unpeeled whole potatoes on a baking sheet, and drizzle everything with olive oil;
Step 3
Sprinkle the dish with chopped rosemary, thyme, and add bay leaves;
Step 4
Preheat the oven to 180°C (350°F) and bake the chicken for 45 minutes, then crush the potatoes with a fork to absorb all the flavors;
Step 5
Add olives, drizzle everything with the juice of the baked lemon, mix, and bake for another 15 minutes until the chicken is cooked and the potatoes are golden brown.
