Ingredients
- Fresh Red Bell Peppers - 2 pieces
- Eggplants - 3 pieces
- Olive Oil - 11 tablespoons
- Cinnamon - 1 teaspoon
- Green Beans - 7.1 oz
- Red Onion - 1 head
- Feta cheese - 7.1 oz
- Pomegranate Seeds - ½ cup
- Parsley - 1 bunch
- Garlic - 1 clove
- Lemon Juice - 1 tablespoon
- Black Pomegranate Molasses - 2 tablespoons
Step by Step guide
Step 1
Preheat the oven to 200°C.
Step 2
Heat the grill. Cut the peppers into quarters, then place them skin side up on a baking sheet. Grill them. Place in a plastic bag and let sit for 5 minutes. Once cooled, peel off the skin. Set aside.
Step 3
Place the eggplants on a baking sheet, drizzle with olive oil and cinnamon, then season with salt and pepper. Roast until golden brown for about 25 minutes.
Step 4
Meanwhile, mix all the ingredients for the dressing.
Step 5
Arrange the eggplants, green beans, onion, and peppers on a large plate. Crumble the feta on top and sprinkle with pomegranate seeds. Drizzle with a little more dressing, then garnish with parsley.
