Mediterranean Vegetarian Burgers

Ingredients

  • Pasta - 4.2 oz
  • Red Quinoa - ½ cup
  • Vegetable Broth - 7 fl oz
  • Olive Oil - 1½ tablespoons
  • Onion - 7.1 oz
  • Garlic - 9 cloves
  • White Beans - 10.6 oz
  • Broccoli - 3.5 oz
  • Cabbage - 7.1 oz
  • Tomato Sauce - 2 tablespoons
  • Kalamata olives - 6 pieces
  • Sun-Dried Tomatoes - 2 pieces
  • Canola Oil - 2 tablespoons

Step by Step guide

Step 1

Cook the pasta in a large pot of boiling water for 19 minutes or until very soft. Drain the water, measure out 1½ cups of well-packed pasta, and set aside.

Step 2

Bring the quinoa and broth to a boil. Cover, reduce heat, and cook for 13 minutes or until the broth is slightly undercooked. Some grains will have opened, but most of the quinoa will still have a slight crunch. Drain the water and set aside.

Step 3

Heat the oil in a small saucepan over medium heat. Add the onion and cook for 1 minute. Add the garlic and cook for another minute. Set aside.

Step 4

Blend the pasta and white beans in a food processor for 1 minute or until a smooth paste forms (it's okay if there are a few small pieces of pasta remaining). Transfer the mixture to a large bowl. Stir in ¾ cup of quinoa, broccoli, cabbage, bell pepper, tomato sauce, olives, sun-dried tomatoes, and the onion and garlic mixture. Season with salt and pepper to taste if desired. Mix and mash the mixture. Form 6 patties about ½ cup in size. Brush the tops of the patties with canola oil.

Step 5

Preheat the grill to high heat. Brush the grill grate with canola oil. Place the patties on the grill, oiled side down. Place the grate on the grill, cover, and cook for 6-7 minutes. Brush each patty again and carefully flip them. Close the grill and cook for another 3-4 minutes.

Step 6

Just before the pasta is ready, scoop out 1¾ cups of water from the pot and pour it into the pesto, mixing well. Rinse the pasta and place it in a large, warm bowl. Add the onion mixture and cheese; mix well. Serve immediately.
