- Canned Grape Leaves - 3.5 oz
- Sumac - 3 tablespoons
Step by Step guide
Step 1
Soak the rice in warm water for 15 minutes.
Step 2
Chop the tomatoes, bell pepper, and garlic in a blender.
Step 3
Rinse the rice and transfer it to a large bowl. Add all the ingredients except for the grape leaves and sumac, and mix everything together.
Step 4
Place the filling on the grape leaves and roll them into thin 'fingers'.
Step 5
I cook in a pressure cooker. If you don't have one, use a regular pot. Arrange the 'fingers' in the pot, cover with water (enough to cover them by about a finger's width), add a little sumac, and place a weight on top. In a pressure cooker, no weight is needed. Cook until done. Under pressure, it takes about 18-20 minutes.
Step 6
In a separate pot with 1 liter of water, boil the sumac. You can season it with lemon if you like it more sour. Bring to a boil and simmer over medium heat for about 15 minutes. Once ready, strain it.
Step 7
When everything is ready, drain the water into a separate bowl and place the dolma on a plate. The drained water can be mixed with the sumac dressing.
