Melon and Cream Cheese Salad
Ingredients
- Watermelon - 10.6 oz
- Gingerbread Spice Mix - 1 teaspoon
- Semi-soft cream cheese - 5.6 oz
- Meyer Lemon Juice - 0 fl oz
- Hazelnut - 1.1 oz
- Sugar - 1.4 oz
- Arugula - 1.4 oz
- Prosciutto - 1.8 oz
- Citrus Zest Mix - to taste
Step by Step guide
Step 1
Prepare all the ingredients.
Step 2
In a small saucepan, melt the sugar with a splash of water.
Step 3
Add the hazelnuts to the caramel, stir, and spread them on parchment paper to let the caramel set.
Step 4
Chop the caramelized hazelnuts coarsely with a knife.
Step 5
Remove the seeds and skin from the melon and cut it into cubes about 2 cm on each side.

Sprinkle the melon with the sesame spice mix and let it sit for 5–10 minutes.

Add a pinch of salt to the cream cheese, mix in the lemon juice, and whip until smooth.

On serving plates, place the whipped cheese in a nice mound and sprinkle it with hazelnuts.

Top with arugula, prosciutto, and melon cubes.
