- Lime - 1 piece
- Watermelon - 2 lbs
- Fresh Mint - 3 spoons
- Sugar - 1 tablespoon
- Grated Ginger Root - 1 tablespoon
- Honey - 1 tablespoon
Step by Step guide
Step 1
Remove all seeds and other inedible parts from the melon. It's best to use a firm, unsweetened melon, such as cantaloupe. If that's not available, you can use sweet Uzbek varieties, but don't add any sugar.
Step 2
Scoop the flesh of the melon out of the rind using a teaspoon. There are special spoons designed for this purpose, which scoop out the melon flesh in perfectly shaped balls. However, the presentation in this salad is not the main focus.
Step 3
Place the melon flesh in a deep bowl, then grate the lime zest into it, and squeeze the juice from the lime (remember, zest comes before juice; grating a squeezed lime is quite the challenge). Add chopped mint, grated ginger, sugar, and honey. Mix well. Let it sit in the refrigerator for ideally half an hour (if the melon is chilled, you can skip this step, although allowing the ingredients to mingle for half an hour will enhance their flavors). Serve.
