Mexican Fried Beans
Ingredients
- Vegetable Oil - 4 tablespoons
- Onion - 1 head
- Canned Beans - 2 cans
- Feta cheese - 1.8 oz
- Garlic - 2 cloves
- Ground Cumin - ¼ teaspoon
Step by Step guide
Step 1
Heat the oil in a large skillet over low heat. Add the finely chopped onion and sauté until soft. Add the minced garlic and cumin, and stir.
Step 2
Add half of the beans along with a small amount of liquid and mash the onion and bean mixture into a coarse puree using a potato masher. Gradually add the remaining beans, mashing them as well. Add liquid from the can if necessary.
Step 3
Fry the beans, stirring constantly, over medium heat for 4-5 minutes until the puree starts to dry out.
Step 4
Transfer the finished dish to warmed plates, sprinkle with crumbled cheese on top, and serve immediately.
