Mexican Rice
Ingredients
- Onion - 1 head
- Garlic - 2 cloves
- Long-Grain Rice - 7.1 oz
- Vegetable Oil - 2 tablespoons
- Chili jam - 1 teaspoon
- Turmeric - 1 teaspoon
- Orange Bell Peppers - 1 piece
- Campbell's Beef Broth - 13 fl oz
- Scallions - 1 bunch
- Parsley - ½ bunch
- Ground ancho chili pepper - 1 piece
- Olives stuffed with lemon - 1.8 oz
- Salt - to taste
- Lean Beef - 17.6 oz
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Peel and finely chop the onion and garlic. Heat 1 tablespoon of vegetable oil in a pan and sauté the onion until translucent for about 5 minutes. Add the rice, chili, turmeric, and sauté for another 2 minutes. Pour in the broth and cook for 15–20 minutes over low heat.
Step 2
Wash the bell pepper and green onion, peel and chop them. Cut the chili in half, remove the seeds, and finely chop. Wash and finely chop the parsley. Slice the olives.
Step 3
Transfer the rice to a bowl along with the spices. Heat the remaining oil in the pan and, stirring, sauté the ground beef over medium heat for about 10 minutes until it becomes crumbly.
Step 4
Place the rice in the pan with the ground beef. Add the chopped bell pepper, green onion, parsley, chili, and olives. Heat the rice without covering it, and serve immediately.
