Description
Mexican Rice with Beans
Ingredients
- Long-Grain Rice - 16.9 oz
- Olive Oil - 1 tablespoon
- Onion - 1 head
- Garlic - 4 heads
- Mild Chili Spice - 0.4 oz
- Ground Black Pepper - to taste
- Chicken Broth - 10 fl oz
- Salt - ¾ spoons
- Red Canned Beans - ½ cans
Step by Step guide
Step 1
In a large pot over medium heat, warm the olive oil. Add the chopped onion, minced garlic, and pepper. Sauté for about 9 minutes, until the onion becomes translucent. Add the rice and stir for 2 minutes. Then pour in the broth, season with salt, and bring to a boil.
Step 2
Reduce the heat and cook the rice for about 15 more minutes, until it becomes tender and absorbs the broth. Remove the pot from the heat and let the rice rest with the lid on for about 5 minutes.
Step 3
Place the rice in a bowl, add half a can of red beans, and let it sit for a while, stirring occasionally. Season with salt and pepper.
