Mexican Tortillas with Tofu
Ingredients
- Chopped Cilantro - 1 cup
- Olive Oil - 1½ tablespoons
- Onion - 1 head
- Green Bell Pepper - 1 piece
- Firm tofu - 15.9 oz
- Salsa - 1 cup
- Tomatoes - 2 pieces
- Jalapeño pepper - 1 piece
- Dry yeast - 2 teaspoons
- Ground Cumin - 1 teaspoon
- Turmeric - ¼ teaspoon
- Wheat Tortillas - 8 pieces
Step by Step guide
Step 1
Heat the oil in a large skillet over medium heat.
Step 2
Add the onion and sauté for 5 minutes, or until the onion becomes translucent.
Step 3
Add the bell pepper and cook for another 5-7 minutes, or until the vegetables start to brown.
Step 4
Add the tofu, crumbled, one piece at a time.
Step 5
Add the salsa, tomatoes, chili, yeast (if using), cumin, and turmeric to the tofu mixture.
Step 6
Cook for 5-8 minutes, until the tomatoes are soft. Add the cilantro and season with salt and pepper to taste.
Step 7
Divide the finished tofu mixture among the tortillas and serve with salsa.
