Mexican Zucchini Soup
Ingredients
- Courgette - 14.1 oz
- Onion - ½ piece
- Canned Corn - 7.1 oz
- Canned Jalapeño Peppers - 1 tablespoon
- Butter - 1 tablespoon
- Chicken Broth - 1 qt
- Lime Juice - 1 tablespoon
- Natural Yogurt - 2 tablespoons
- Cheese Spread - 1.8 oz
- Parsley - 0.4 oz
Step by Step guide
Step 1
Finely chop the onion, dice the zucchini, and if the pepper is not dried, chop it.
Step 2
Heat the butter in a pot. Add the onion and sauté until it becomes soft. Then add the zucchini and stir; the zucchini should be al dente. Add the broth and bring to a boil.
Step 3
Add the corn and jalapeño, then the yogurt, and mix well.
Step 4
Add the lime juice and season to taste (salt/pepper). Add most of the cheese to the pot, reserving some cheese for garnish.
Step 5
Sprinkle with parsley and cheese and serve.
