Description
The Milanese cutlet, Milanese chop, Milanese schnitzel—this famous dish is known by various names in Russian. Not long ago, it was believed that the Milanese cutlet was the prototype of the Vienna schnitzel, but it turned out that the first is one thing, while the second is something entirely different.
Ingredients
- Veal loin - 2 pieces
- Chicken Egg - 2 pieces
- Wheat Flour - 0 oz
- Breadcrumbs - 5 oz
- Ghee - 5 oz
- Salt - to taste
Step by Step guide
Step 1
Prepare the necessary ingredients.
Step 2
Pound the pork loin with the flat side of a meat mallet, or you can also use a small saucepan.
Step 3
Coat the meat in flour.
Step 4
Then in the beaten eggs.
Step 5
Then in the breadcrumbs.
Step 6
Use the blade of a knife to create a lattice pattern on both sides of the meat, doing this gently to avoid cutting through the meat.
Step 7
In a skillet, heat a generous amount of clarified butter until the cutlet is almost swimming in it.
Step 8
Place the meat in the skillet and sear for 3–5 minutes on one side, then flip and sear for the same amount of time on the other side.
Step 9
Place the cooked patty on a paper towel to remove excess grease.
Step 10
Season with salt and serve immediately.
