Ingredients

  • Tomatoes - 5.3 oz
  • Onion - 3.5 oz
  • Orange Bell Peppers - 2.8 oz
  • Garlic - 5 cloves
  • Mild Chili Spice - 1.1 oz
  • Canned Jalapeño Peppers - 0.5 oz
  • Red Wine Vinegar - 0 fl oz
  • Passata Tomato Sauce - 2.5 oz
  • Water - 40 fl oz
  • Bay leaf - 1 piece
  • Thyme - 3 sprigs
  • Allspice berries - 5 pieces
  • Breadcrumbs - 7.1 oz
  • Turmeric - 0 oz
  • Parsley - 0.2 oz
  • Parmesan Cheese - 0.7 oz
  • Rice Vinegar for Sushi - 3 fl oz
  • Cucumbers - 7.1 oz
  • Citrus Zest Mix - 0.2 oz
  • Smoked Ham on the Bone - 4 pieces
  • Ghee - 1.8 oz
  • Salt - 5.5 oz
  • Sugar - 1.8 oz
  • Wheat Flour - 3.5 oz
  • Chicken Egg - 2 pieces

Step by Step guide

Prepare all the ingredients. In 1 liter of water, add 100 grams of salt, bay leaves, allspice, and thyme. Heat until the salt dissolves, then let it cool. Place the meat in the cooled brine and refrigerate overnight.

Chop the bell pepper, onion, and tomatoes into pieces for the sauce.

Transfer the vegetables to a baking sheet, add 3 cloves of garlic, and chopped chili pepper to taste. You can leave the seeds in the chili if you prefer a spicier ketchup. Place the vegetables in an oven preheated to 356°F for 20 minutes.

For the cucumbers, prepare the "321" marinade (one part salt and sugar, two parts vinegar, and three parts water). Mix the water with rice vinegar, salt, and sugar, heat it until the dry ingredients dissolve, and then let it cool.

Slice the cucumbers into rings and place them in the cooled marinade. Let them sit for 30 to 50 minutes.

Grate the Parmesan cheese finely into the breadcrumbs, and also grate the lemon zest.

Chop the parsley leaves, add them to the breadcrumbs, sprinkle in a pinch of salt and turmeric, and mix well.

Transfer the roasted vegetables to a blender, add jalapeño (optional), tomato paste, and red wine vinegar.

Blend until smooth. Add salt and sugar to taste and mix again. Chill.

Whisk the egg with 50 ml of water.

Pound the loin and pat it dry with a paper towel.

Coat the meat in flour, then dip it in eggs, and finally in the breading mixture.

In a skillet, heat the oil, add 2 cloves of garlic, and place the meat in.

Fry on both sides until golden brown, about 2 minutes per side, drizzling with oil.

The internal temperature of the cooked meat should be 65–153°F. Transfer the cooked pork onto a napkin to remove excess fat.

Serve the Milanese-style pork with pickled cucumbers and homemade ketchup.
