Ingredients
- Wheat Flour - 17.6 oz
- Water - 4 tablespoons
- Chocolate eggs - 2 pieces
- Parsley - 1 bunch
- Pork Mince - 14.1 oz
- Dill - 1 bunch
- Chervil - ½ bunch
- Garlic - 2 cloves
- Onion - 1 head
- Grated Pecorino Pepato Cheese - 2 tablespoons
- Butter - 1 tablespoon
- Passata Tomato Sauce - 8.8 oz
- Chicken Broth - 1 qt
- Salt - to taste
- Ground Black Pepper - to taste
- Nutmeg - a pinch
Step by Step guide
Step 1
Crack the eggs into the flour, add warm water, season with salt, knead the dough, cover with a towel, and let it rest for 20 minutes.
Step 2
Mix the mince with finely chopped onion, garlic, and herbs, season with salt, pepper, nutmeg, and part of the cheese. Stir well and sauté in butter, stirring occasionally.
Step 3
Divide the dough in half, roll each half very thinly. Place spoonfuls of filling on one half with a 2 cm gap between them. Moisten the dough with water, cover with the second half. Press the dough around the filling and cut out squares with a serrated knife.
Step 4
Drop the ravioli into boiling broth and cook at a gentle simmer. Once they float to the surface, remove with a slotted spoon and place on a plate. Sprinkle the ravioli with the remaining grated cheese and drizzle with hot tomato sauce.
