Ingredients
- Dressed Milk Piglet - 4½ kg
- Mixed salad greens - 10.6 oz
- Vegetable Oil - 3 fl oz
- Eggplants - 10.6 oz
- Sweet Pepper - 10.6 oz
- Mixed tomatoes of different colors - 8.8 oz
- Suluguni Cheese - 2.6 oz
- Imeretian cheese - 2.6 oz
- Spinach - 1.8 oz
- Dry adjika - 4.2 oz
- Lemon - 3.5 oz
Step by Step guide
Step 1
Rinse the piglet, clean it, rub the inside with lemon, salt, and adjika, and let it marinate for 6 hours.
Step 2
Then, brush the skin with vegetable oil (wrap the ears and tail in foil) and place it in the oven at 356°F for 30 minutes. After that, increase the temperature to 428°F and roast for another hour.
Step 3
Cut the eggplants, bell peppers, and tomatoes in half lengthwise and remove the seeds. Place grated cheese on the eggplants – a mixture of 50 grams of sulguni and 50 grams of imeretian cheese.
Step 4
Place grated cheeses (25 grams each of sulguni and imereti) and chopped spinach on the tomatoes and peppers.
Step 5
Place the vegetables in the oven to roast at 428°F for 10 to 12 minutes.
Step 6
Place the cooked piglet on a platter, arranging vegetables and lettuce leaves alongside it.
