Description
Millet finds itself in the company of proteins and fats: porcini mushrooms, eggs, cream, and three types of different cheeses.

- Millet - 1.4 oz
- Porcini Mushrooms - 0.7 oz
- Butter - 1.4 oz
- Chicken Egg - 3 pieces
- Wheat Flour - 4.2 oz
- Sugar - 4.2 oz
- Camembert cheese - 0.9 oz
- Taleggio cheese - 0.9 oz
- Parmesan Cheese - 1.4 oz
- Chicken Broth - 8 fl oz
- Cream - 1 fl oz
- Dill - to taste
- Parsley - to taste
- Apple Wine - 1 fl oz
Step by Step guide
Step 1
Cook the millet until tender using the boiling method, then stir in some butter. Sauté the mushrooms in either butter or vegetable oil.
Step 2
Cook a thick cheese cream by combining the broth, cream, and wine, then adding the cheeses and reducing the mixture until it reaches a creamy consistency.
Step 3
Make a puree from parsley and dill using a blender. Combine the flour and sugar with the eggs and whip to create a classic sponge cake batter. Add the herb puree to the batter and mix until it turns green. Transfer the mixture to a siphon and chill.
Step 4
Before serving, pipe the batter from the siphon into plastic cups and bake the biscuits in the microwave (1 minute on 900W). On a plate, arrange the buckwheat, sautéed mushrooms, two green biscuits, drizzle with cheese sauce, and serve immediately.
