Mini Squid Neapolitan Style
Ingredients
- Squid - 14.1 oz
- Marinated cherries - 2.8 oz
- Mild Chili Spice - 1 piece
- Garlic - 3 cloves
- Parsley - 0.2 oz
- Basil - 0.2 oz
- Capers - 0.4 oz
- Crushed Tomatoes in Their Own Juice - 3.5 oz
- Olives stuffed with lemon - 2.1 oz
- Anchovies - 0.2 oz
- Olives stuffed with lemon - 2.1 oz
- Olive Oil - 3 fl oz
- Dry White Wine - 1 fl oz
Step by Step guide
Step 1
In 60 ml of olive oil, add finely chopped anchovies and garlic.
Step 2
Sauté for 1 minute over medium heat, add 40 ml of dry white wine, let the alcohol evaporate; add the tomatoes in their own juice and mash them with a spatula.
Step 3
Add the fillets of olives, capers, finely chopped parsley and basil, add 2-3 slices of chili pepper and simmer over medium heat for 1.5 minutes until the sauce thickens.
Step 4
30 seconds before the sauce is done, add the halved cherry tomatoes.
Step 5
In a hot skillet, sauté the squid in olive oil for 2 minutes.
Step 6
Drain the squid juice, add the sauce and simmer for another 30 seconds, season with salt to taste.
Step 7
Plate and serve.
