Monaco Hake
Ingredients
- Milk - 5 fl oz
- Cream - 1 fl oz
- Fillet of small-eyed hake - 2 pieces
- Olive Oil - 2 tablespoons
- Spanish onions - 1 head
- Tomatoes - 2 pieces
- Garlic - 1 clove
- Whole egg - 2 pieces
- Salt - to taste
- Grated Pecorino Pepato Cheese - 1.8 oz
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Preheat the grill in the oven. Pour milk and cream into a pan and bring to a boil. Add the fish, reduce the heat, and cook the fish for 4-5 minutes until tender.
Step 2
Meanwhile, heat the oil in a pan and sauté the finely chopped onion for a few minutes until soft, then add the chopped tomatoes and minced garlic and cook for another 2 minutes. Season with salt, divide between 2 ovenproof dishes, and keep warm.
Step 3
Place the fish on top of the tomatoes and keep warm.
Step 4
Season the milk sauce with salt and pepper and stir in the yolks, cooking for another 1-2 minutes until thickened, then sprinkle with Parmesan and pour the sauce over the fish. Place the dishes under the grill for 1-2 minutes until a golden crust forms. Serve immediately.
