Description
If you don't like cardamom, you can replace it with black pepper. You can serve potatoes or buckwheat as a side dish.

- Beef Kidneys - 17.6 oz
- Wheat Flour - 3.5 oz
- Salt - to taste
- Ground Black Pepper - to taste
- Cardamom - 0 oz
- Vegetable Oil - 3 fl oz
Step by Step guide
Step 1
Cut the semi-frozen liver into slices 1.5–2 cm thick. Lightly pound.
Step 2
Coat in salted flour and quickly fry in hot oil until golden brown, leaving the center raw.
Step 3
Transfer to a saucepan, add 3–4 cardamom pods, pepper, and salt to taste.
Step 4
Fry the remaining flour in the pan where the liver was cooked. Make a sauce like for cutlets, but without tomato. Pour the sauce over the liver. Simmer on low heat for 30–40 minutes.
