Ingredients
- Monkfish tail - 3 lbs
- Butter - 0.9 oz
- Onion - 1 head
- Wheat Flour - 1.5 tablespoons
- Milk - 25 fl oz
- Passata Tomato Sauce - 0.5 tablespoons
- Ocean salt - to taste
Step by Step guide
Step 1
If possible, try to obtain the backbone of the monkfish.
Step 2
In a skillet, melt the butter. Add the finely chopped onion and cook over low heat, stirring occasionally, for about 10 minutes until the onion is soft and translucent. Stir in the flour and continue to mix.
Step 3
After a couple of minutes, gradually pour in the milk in small portions, then add the tomato sauce, place the backbone (if found), and lightly season everything with salt. Cut the fillet into six steaks, season with salt, and place them in the sauce.
Step 4
Cook without bringing to a boil for 8 minutes until done. Before serving, remove the fish backbone from the skillet.
