Moose Cutlets à la Karelia
Ingredients
- Moose meat - 17.6 oz
- Bread roll - ½ piece
- Milk - 4 fl oz
- Onion - 2 heads
- Pork fat - 3.5 oz
- Chicken Egg - 1 piece
- Breadcrumbs - 3.5 oz
- Carrot - 1 piece
- Sour Cream - 5 tablespoons
- Passata Tomato Sauce - 3 tablespoons
- Chicken Broth - 23 fl oz
- Wheat Flour - 3 tablespoons
- Herbs - 1 bunch
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Wash the meat, cut it into pieces, and pass it through a meat grinder (preferably twice).
Step 2
Soak the bread roll in milk, squeeze it out, and also pass it through the meat grinder along with the onion.
Step 3
Season the resulting mixture with salt and pepper, add the pork fat, egg yolk, mix well, and beat.
Step 4
Form small cutlets, coat them in breadcrumbs, and fry on both sides in a well-heated skillet.
Step 5
Prepare the sauce in which we will stew the cutlets. Chop the onion and sauté for about 5–7 minutes. Grate the carrot on a coarse grater, add it to the onion, and sauté the vegetables for another 5 minutes. Add the flour to the vegetables, mix well. Pour in the broth. Add the sour cream and tomato paste. Reduce the sauce for another 10 minutes, add herbs, salt, and pepper.
Step 6
Place the cooked cutlets in a saucepan, pour the sauce over them, and put them in the oven or on the stove for 10 minutes.
