Moroccan Chicken in Citrus Marinade

Ingredients

  • Salad Potatoes - 3 lbs
  • Poultry - 1 piece
  • Fennel - 2 pieces
  • Oranges - 3 pieces
  • Garlic - 3 cloves
  • Gin - 3 fl oz
  • Vegetable Oil - 5 tablespoons
  • Ground Black Pepper - ½ teaspoon
  • Ocean salt - 1 teaspoon

Step by Step guide

Step 1

Preheat the oven to 356°F.

Step 2

Peel and finely chop the garlic.

Step 3

Grate the zest of two oranges and squeeze the juice from three oranges. Prepare the marinade from gin, zest and juice of the oranges, chopped garlic, salt, pepper, and vegetable oil.

Step 4

Cut the chicken into large pieces, place it in a plastic bag, and pour in the marinade. Tie the bag and refrigerate for 3–5 hours.

Step 5

Cut the potatoes and fennel into large pieces and boil them in boiling water for 5–7 minutes.

Step 6

Place the fennel and potatoes on a baking sheet, top with the pieces of chicken, and drizzle everything with the marinade.

Step 7

Bake in the preheated oven for 30–35 minutes.
