Moroccan Chicken with Spicy Couscous
Ingredients
- Cilantro - to taste
- Chicken Drumstick - 4 pieces
- Garlic - 1 head
- Tomatoes - 3 pieces
- Turnips - 2 pieces
- Pumpkin - 10.6 oz
- Onion - 1 piece
- Shallot - 5 pieces
- Toasted Cumin Seeds - ½ teaspoon
- Turmeric - 1 teaspoon
- Red Long Chili Peppers - 1 teaspoon
- Grated Ginger Root - 1 teaspoon
- Mild Chili Spice - 1 piece
- Ground clove - 2 pieces
- Olive Oil - 2 tablespoons
- Salt - to taste
- Couscous - 10.6 oz
Step by Step guide
Step 1
Remove the skin from the chicken drumsticks, trim the fat, and cut into 3–4 pieces.
Step 2
In heated olive oil, sauté cumin seeds and finely chopped chili pepper for 30 seconds (remove seeds for less heat).
Step 3
Add the chicken and fry until golden brown.
Step 4
Add the chopped onion, turmeric, red pepper, ginger, cloves, mix, and sauté for three minutes.
Step 5
Add the coarsely chopped carrots, pumpkin, and shallots.
Step 6
Add the head of garlic, cut in half crosswise.
Step 7
Peel the tomatoes, chop them, and add to the saucepan.
Step 8
Pour in 200 ml of hot water, stir, cover, and simmer for 40 minutes, stirring occasionally.
Step 9
When the chicken and vegetables are ready, prepare the couscous (as instructed on the package), add 1 teaspoon of olive oil (or butter if desired) and chopped cilantro, and mix.
Step 10
On a plate, mound the couscous and arrange the pieces of chicken and vegetables around it.
