Moroccan Mushroom Couscous
Ingredients
- Red Onion - 1 head
- Olive Oil - 1 teaspoon
- Ground Cinnamon - ½ teaspoon
- Ground Cumin - 1 teaspoon
- Mushrooms - 10.6 oz
- Canned tomatoes - 14.1 oz
- Canned chickpeas - 14.1 oz
- Clear Honey - 1 teaspoon
- Couscous - 6.2 oz
- Dried Apricots - 1.8 oz
- Parsley - 0.6 oz
Step by Step guide
Step 1
Sauté the onion in oil for 6 minutes until soft.
Step 2
Add cinnamon and cumin and cook for another 1 minute, stirring.
Step 3
Add the mushrooms and cook for another 2 minutes, then stir in the tomatoes, chickpeas, and honey. Season with salt and simmer for 7-8 minutes.
Step 4
Meanwhile, mix the couscous with the dried apricots and spices in a bowl. Pour in 250 ml of boiling water, stir, then cover.
Step 5
Let it sit for 7 minutes. Serve, fluffing with a fork. Add parsley and top with the mushroom mixture. Serve with green beans.
