Description

This is a mix of several moussaka recipes I found online. It's perfect for serving guests. If you're cooking for yourself, divide the ingredient quantities by 2 or 3, otherwise the cooking process turns into an endless task (since each slice needs to be fried on both sides... I haven't figured out a solution for that yet). But the time spent was worth it — it turned out very delicious.

Ingredients

  • Eggplants - 4 lbs
  • Salad Potatoes - 1 lbs
  • Ground meat - 2 lbs
  • Passata Tomato Sauce - 1.8 oz
  • Onion - 2 heads
  • Garlic - 4 cloves
  • Tomatoes - 5 pieces
  • Dry White Wine - 7 fl oz
  • Butter - 3.5 oz
  • Grated Pecorino Pepato Cheese - 17.6 oz
  • Wheat Flour - 4 tablespoons
  • Milk - 1 qt
  • Farm fresh eggs - 4 pieces
  • Nutmeg - 0.7 oz
  • Cinnamon - 0.7 oz
  • Salt - to taste
  • Ground Black Pepper - to taste

Step by Step guide

Step 1

Peel the eggplants, slice them thinly, salt them, and let them sit (20 minutes).

Step 2

Peel the tomatoes (make cross cuts, pour boiling water over them for 5 minutes, then rinse with cold water to remove the skin), and chop them.

Step 3

Fry the ground meat, onion, and garlic.

Step 4

Add the peeled tomatoes, wine, tomato paste to the ground meat, season with salt and pepper, and add nutmeg and cinnamon. Simmer until the liquid evaporates (I simmered for 40 minutes, but it didn't evaporate completely; however, 40 minutes is more than enough).

Step 5

Slice the potatoes thinly.

Step 6

Fry the eggplants and potatoes on both sides for a few minutes each.

Step 7

Prepare the sauce: melt the butter until it foams, add the flour, sauté, then add hot milk, stir, add half of the cheese and salt. When the sauce thickens, remove from heat. Beat the eggs and slowly pour them into the sauce while stirring constantly, add a pinch of nutmeg, salt, and pepper to taste.

Step 8

Grease a deep baking dish with oil and sprinkle with breadcrumbs.

Step 9

Layer the ingredients in the dish (from bottom to top): half of the eggplants — grated cheese — potatoes — ground meat — the remaining eggplants — grated cheese — sauce — cheese.

Step 10

Place in an oven preheated to 356°F for 35 minutes (covered).
