Mousseline Sauce for Fish
Ingredients
- Butter - 1.8 oz
- Wheat Flour - 2 tablespoons
- Fish Oil - 25 fl oz
- Whole egg - 1 piece
- Egg white - 1 piece
- Salt - to taste
Step by Step guide
Step 1
Melt the butter in a saucepan, add the flour, and slowly pour in the stock while constantly whisking the mixture. Remove the saucepan from the heat and continue whisking until the sauce is smooth. Then return the saucepan to the heat and cook, stirring, for 4 minutes. Season with salt to taste.
Step 2
Transfer the sauce to a heatproof dish and place it in a larger pot of hot water to keep the sauce warm.
Step 3
Before serving, whip the egg white well, and while continuing to whisk, add the yolks, then slowly pour the egg foam into the sauce while constantly whisking. Serve immediately in a warmed sauceboat.
