Ingredients
- Courgette - 2 pieces
- Marinated cherries - 10 pieces
- Hard Cheese - 3.5 oz
- Pickled Chanterelles - 3.5 oz
- Toasted Sesame - 1 tablespoon
- Vegetable Oil - 1 fl oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Slice the zucchini into thick rounds, the mushrooms into slices, and cut the cherry tomatoes in half.
Step 2
Grate the cheese on a coarse grater.
Step 3
Fry the zucchini in oil until golden brown.
Step 4
Separately fry the champignon mushrooms and simmer for 5–10 minutes.
Step 5
Layer the zucchini in a baking dish, then the mushrooms, and top with the halved cherry tomatoes.
Step 6
Season with salt and pepper to taste.
Step 7
Bake at 356°F for 15–20 minutes.
Step 8
Sprinkle with cheese and sesame seeds.
Step 9
Return to the oven for another 15 minutes to brown the cheese.
