Mushroom Rice with Chicken
Ingredients
- Chicken fillet - 10.6 oz
- Dried Chinese mushrooms - 7.1 oz
- Onion - 1 head
- Rice - 14.1 oz
- Spices - to taste
Step by Step guide
Step 1
Soak the dried mushrooms in 0.5–0.8 liters of water for 1 hour. It's hard to specify the exact amount of mushrooms, as I usually scoop out about 2 cups from the bag.
Step 2
At the same time, cut the fillet into cubes and marinate it to your taste (I add soy sauce or sunflower oil, a little curry, and chicken seasoning).
Step 3
After an hour, take out the mushrooms but do not discard the water; we will need it later. Cut the mushrooms so that they are approximately the same size as the chicken.
Step 4
Finely chop the onion and add it to a heated pan with sunflower oil. When it starts to brown slightly, add the chicken and mushrooms. Sauté until the chicken is golden.
Step 5
Add the rice and mix well. Reduce the heat to low and let it sit for about 2 minutes.
Step 6
Then add the mushroom soaking water to the pan so that it completely covers the rice. Cook covered until done (about 20–30 minutes). If necessary, add more water if it evaporates completely and the rice is not yet ready.
