Description
These mushrooms make a wonderful side dish for any roasted or baked meat, and they are particularly delightful when paired with whole roasted chicken.
Ingredients
- Champignons - ½ kg
- Garlic - 4 cloves
- Spanish onions - 1 head
- Lemon - ¼ pieces
- Leek - 1.1 oz
- Butter - 2.6 oz
- Olive Oil - 1 fl oz
- 10% cream - 3 fl oz
- Chopped Sage Leaves - 0.7 oz
- Salt - to taste
- Ground Black Pepper - to taste
Step by Step guide
Step 1
Finely chop the onion and garlic, then sauté them in a mixture of olive oil and butter. Start by frying the onion, and when it begins to turn golden, add the garlic. The garlic should not brown. As soon as it releases its characteristic roasted aroma, immediately add the chopped mushrooms and leek to the pan. Sauté everything, stirring occasionally.
Step 2
The mushrooms will release their liquid and begin to sauté lightly, at which point you should squeeze the juice of a quarter of a lemon into the skillet, season with salt and pepper. Mix thoroughly, then pour in the cream, stir again, let it simmer for two minutes, add chopped parsley, mix, and remove from heat.
