Ingredients
- Pasta shells - 2 lbs
- Shallot - 2 pieces
- Garlic - 4 cloves
- Bay leaf - 1 piece
- Thyme - 0.2 oz
- Leek - 0.7 oz
- Dry White Wine - 17 fl oz
- Cream - 3 fl oz
- Parsley - 0.7 oz
- Butter - 0.7 oz
Step by Step guide
Step 1
Clean the mussels to remove any dirt and rinse them under running water.
Step 2
In a skillet, sauté finely chopped onion and garlic in butter.
Step 3
Pour in the wine, add the bouquet garni (stems of parsley, a piece of leek leaf, bay leaf, and thyme). Cook for three minutes to allow the alcohol to evaporate. Then, add the mussels to the wine and cook for another three to four minutes, after which remove the mussels.
Step 4
Strain the broth through a fine sieve, return it to the heat, and whisk in the cream. Sprinkle the resulting sauce-soup with chopped parsley and pour it over the mussels when serving.
