Ingredients
- Rabbit Fillet - 1 piece
- Salt - a pinch
- Garlic - 0.2 oz
- Ginger - 0.4 oz
- Leek - 1 stalk
- Chinese Five Spice - a pinch
- Rice Sweet Wine - 2 fl oz
- Cinnamon - 2 pieces
- Sugar - a pinch
- Tortillas - 1 piece
- Unagi Sauce - 2 spoons
- Kung Pao Sauce - 3 spoons
- Cucumbers - 1 piece
- Honey - 0.4 oz
- Daikon - 1.1 oz
- Soy Sauce - 0 fl oz
Step by Step guide
Step 1
Finely chop the ginger and garlic, and slice 10 grams of leeks into thin rings. Combine the vegetables with salt, sugar, five-spice powder, 50 ml of rice wine, cinnamon, and a tablespoon of hoisin sauce.
Step 2
Marinate the duck in this mixture overnight.
Step 3
Wipe off the excess marinade from the duck. Heat a skillet and sear the duck: first the skin side until crispy, then the other side. After that, place the duck in a preheated oven at 356°F for seven minutes.
Step 4
Peel a cucumber about 10 cm long, removing the skin and seeds. Slice the remaining flesh into thin strips. Do the same with the leek and daikon.
Step 5
In a saucepan, combine two tablespoons of hoisin sauce, the same amount of rice wine, honey, and soy sauce. Stir everything together, bring to a boil, and then remove from heat.
Step 6
Cut out two circles with a diameter of 10 cm from the flatbread, quickly fry them until golden brown but still soft. Spread unagi sauce on one side of each flatbread circle. Top with a little shredded cucumber and leek, then add slices of duck. Drizzle the duck with sauce and finish with daikon on top. Serve with fried potatoes and beer.
