Ingredients
- Farm fresh eggs - 2 pieces
- Garlic - 3 cloves
- Vegetable Oil - 4 tablespoons
- Onion - 1 head
- Mild Chili Spice - 2 pieces
- Shrimp - 1 teaspoon
- Coriander essential oil - 1 teaspoon
- Sugar - ½ teaspoon
- Shrimp - 14.1 oz
- Pork tenderloin - 7.1 oz
- Long-Grain Rice - 7.1 oz
- Soy Sauce - 3 tablespoons
- Scallions - 4 stalks
- Eel - ½ piece
- Courgette - 1 piece
Step by Step guide
Step 1
Beat the eggs with 0.25 teaspoon of salt. Heat a skillet and lightly grease it with vegetable oil. Pour a quarter of the egg mixture into the skillet and cook for 1–2 minutes over medium heat. Flip the omelet and fry for another 30 seconds. Transfer the omelet to a plate and repeat with the remaining mixture. Once the omelets cool, roll them up and slice into strips.
Step 2
Combine the minced garlic, chopped onion, chili, shrimp paste, coriander, and sugar. Transfer to a blender and blend into a paste.
Step 3
Heat 1–2 tablespoons of vegetable oil in a wok. Add the paste and cook over high heat for 1 minute. Add the shrimp and sliced meat. Stir-fry for 2–3 minutes.
Step 4
Cook the rice, drain, and cool. In the wok, pour in the remaining oil and add the cold rice. Stir-fry until heated through, then add soy sauce and chopped green onion, stir-frying for another minute.
Step 5
On the edges of a large plate, arrange the sliced lettuce. In the center, place the rice, then the meat with shrimp, and top with the omelet and sliced cucumber. Serve immediately.
